Japanes Cucumber Salad
Julienne cucumbers, salt with kosher salt or sea salt , place in strainer for 10 minutes, put in a bowl, pour over rice wine vinegar (i added a little unfiltered apple cider vinegar as well), chill for an hour, serve cold or room temperature.

Good Mornin'!
Ok, so its technically afternoon, but baby was at my mom's and I got to sleep in - til noon! I think I can walk around with a smile on my face all day now;D...had Steak Taco Salad for dinner again last night - yummy...and I am feeling creative and am going to attempt a Thai type lettuce wrap, will post the recipe/video if it turns out...Now for the really exciting part...Weigh In: 151.4 (1.0 lb loss - thats right - a full pound!)

Steak Taco Salad Video
Cook Steak with spices (dried onion, garlic salt, cumin, chili powder, cayenne pepper, paprika, oregano) and a little water...Serve on a bed of lettuce with cilantro and tomatoes, squeeze lime juice over, yum!

Pedicure Idea
Went to go paint my toes and it took me a minute to realize those were my dry, dehydrated appendages...realized my feet needed some serious maintenance...so heres what I came up with: Fill bucket/tub/whatever with warm water and a little baking soda, I also had dried lavender on hand so I tossed that in there...make a scrub with water, baking soda, and salt...scrub feet vigorously several times with this mixture, then wash & dry feet, any dead skin will be removed and the baking soda does leave skin feeling softer...as a final step I also liberally applied coconut oil and put on some socks (coconut oil is permitted by some HCGrs and forbidden by others)...my feet are nowhere near as pretty as they are when I am able to lather and slather, but they no longer look like they belong on a 90 year old, so all in all a success..

Dinner Party's are possible on HCG...
We got together w/ 3 other couples this past Mon evening for dinner 5/8 of us are on Dr. Simeons HCG protocol, my husband is in maintenance (Phase 4), and 2 spouses are not on the protocol, yet we were able to have a delicious dinner (and dessert!) that all were happy with...I'm gonna post the vid here and recipe how-to below...
For Shrimp Scampi: We used jumbo shrimp, thawed and shelled, then weighed, 6=100g...Place shrimp in pan, saute with lemon juice, sea salt (we used grey sea salt), garlic, and crushed red pepper (for those not on HCG you can remove your shrimp and then add some butter to make the sauce a bit creamy)
For Salad: Kevin Trudeaus book has a list of certain authorized veggies that you can mix (among them are cabbage, lettuce, radishes, cucumbers, tomatoes)...you may choose to mix or simply serve shrimp w/ lettuce/spinach (use the sauce from the sauteed shrimp as your dressing)
For Dessert: Fresh strawberries w/ Lemon Ice: 1c water, 1 pkt stevia, juice of 1 lemon...mix well, place in freezer, check every 30 min, and scrape/mix to create a granita or you can freeze in ice cube trays and blend
We had a great evening, a filling (and Phase 2 appropriate) meal, and even those not on HCG enjoyed both dinner and dessert...Oh, almost forgot we had stevia sweetened iced yerba mate tea to drink...and, root beer )made with root beer flavored stevia and sparkling water - surprisingly good and very much like the real thing - whoda thunk?)

Dinner Menu - Fish
Great Fish Recipe from a friend (thanks Teri!):
A great fillet of fish, spray the fish with liquid aminos, and throw on some "slap ya momma" seasoning(basically garlic, cayenne, salt, pepper, etc.)...top with asparagus, a couple lemon slices. Put it in parchment paper, and bake altogether.
